Instructions

  1. Preheat the oven to 400 degrees and line a baking sheet with parchment paper or a non-stick mat.
  2. Combine the almond flour, tapioca flour, coconut flour, baking powder, baking soda, and salt in a mixing bowl. Now, add the cold butter to the dry ingredients and cut in using your fingers. Make a well in the center of the mixture.
  3. In another bowl, whisk the coconut milk and lemon juice together and then add the eggs.
  4. Pour the liquid ingredients into the well of dry ingredients and fold in using a rubber spatula until fully combined.
  5. Allow it 5 minutes to make it easier to shape into biscuits, as it will be less moist and sticky.
  6. Coat a ¼ measuring cup with tapioca flour by filling it with a full scoop and then emptying it again, and tapping the cup upside down to remove any excess flour. With this same cup, you should then scoop up enough dough to fill the cup and put it onto your baking sheet. You may need to tap the handle to make it fully release. For this purpose, you can also choose to use an ice cream scoop with a spring release.
  7. Repeat with all of the remaining dough, but be sure to palace each biscuit at least 2 inches apart.
  8. Bake the biscuits for around 12 to 14 minutes, or until the tops have turned lightly golden brown.
