Julie and I are so excited to be on the Cook’s Warehouse Stage at the Decatur Book Festival this weekend. This is one of the largest book festivals in the country so naturally we can’t wait to bring some Paleo goodness to its patrons.

We’ll be demonstrating two of the recipes from our new cookbook- Quick and Easy Paleo Comfort Foods and showing patrons just how much funPaleo can be. Consider this blog post an open invitation for any of our friends to come by and see us. Our demo is set for Saturday from 2-3:30pm. Come on by and get a sneak peak at one of my personal favorites from the new book.

Speaking of the new book, here’s a fantastic recipe for blueberry muffins that I think you’ll all enjoy. Talk about conjuring up happy-comfy thoughts, these muffins will do the trick.


  • 12 paper or foil muffin pan liners
  • 3 cups almond flour
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/3 cup coconut oil, slightly melted
  • 1/4 cup unsweetened, full-fat coconut milk
  • 2 tablespoons honey or maple syrup (optional)
  • 1 1/2 cups fresh blueberries


Preheat the oven to 375°F, and line the wells of a 12-cup muffin tin with liners. In a large mixing bowl, combine the almond flour, cinnamon, baking soda and salt and mix well. Add the eggs, coconut oil, coconut milk and honey and mix thoroughly. Gently fold in the blueberries. Carefully spoon the batter into the prepared muffin tins, so that each well is about 3⁄4 full. Bake for 20 to 25 minutes, or until a toothpick inserted into the middle of each muffin comes out clean.
