When we look back over old comments on posts like this one (read the comments)…or when we start reading some of the reviews from folks about what they love about our book, it honestly puts a little grass in my eye (that would be code for “misty eyed”). Our intention in all of this is to maybe – just maybe – help folks to see that eating real food can and should be delicious, fun, tasty, and doable for the long haul. We know that making the transition to paleo has changed thousands upon thousands of lives, and to be able to help be a part of that transition, to help folks make that transition, is just the best feeling in the world to us.
It’s been quite and adventure. I won’t go into all of it here, but I will say this: we started out in this process as non-bloggers. Sure, we wrote a few blog postings over at BTB Fitness’ Nutrition Blog, but we just started writing one day after super stars Robb Wolf and Nicki Violetti insisted we write a cookbook. We’re still learning the ropes of this whole blog thing, but our intention is to keep on writing here, sharing new recipes – and who knows? Maybe we’ll write another cookbook someday (but we will not even consider that until this book is in all of your hands!).
Now that we can breathe a little easier knowing the books are actually being shipped and folks can now post reviews on Amazon (we hope you will! It gets you an entry into this week’s contest!), I did something I haven’t done in a while: I made something I’ve never made before on Sunday! I’ll post the recipe in a future blog posting, I promise. It ended up being a crispy whole snapper with green mango salad and it was everything Thai food tends to be: sweet, sour, salty, spicy.
In addition to doing up the crispy whole fish with green mango salad (YUM), Charles cooked up some bacon burgers and grilled veggies that afternoon; additionally, I cooked Tuesday morning and Tuesday night. I know – when was the last time I did that?!? The only sad part was that we didn’t have any leftovers of the lamb chops. But my oh my were they good! Here’s what all we cooked up/are eating this week:
- Crispy snapper with green mango salad
- Bacon Burgers
- Lamb chops
- Mashed cauliflower
- Sausage/egg/cabbage scramble
- Grilled veggies
Then of course, we’ve got our trusty frozen items from last week that we did not finish off:
- Sautéed ground beef
- Chicken tomatillo soup
- Smoked chicken from Tennessee
Here’s what this week has been like/is looking like:

I love being back in the kitchen and have a few new recipe ideas up my sleeve that I can’t wait to try! What kinds of recipes would you like to see?
